Pancake Mix Instructions

  1. Heat butter until just melted.

  2. Transfer dry pancake mix into a large mixing bowl.

  3. Whisk together eggs and buttermilk and add to pancake mix. Stir gently until just combined. (It’s fine if there are a few small lumps.)

  4. Stir in melted better and lemon juice.

  5. Cook over medium-low heat until golden brown and cooked through.

  6. Enjoy with Butter and Maple Syrup

Hash Browns

Your hash browns are fully cooked, but they need a good crisping. The best method is a shallow pan fry. Pour about ¼ inch of oil into a skillet or frying pan and heat over medium high. Test the heat by placing a piece of hash browns in the skillet – it should start sizzling immediately. If the oil is not hot enough yet pull the piece of hash browns out and keep heating. Once the oil is hot enough, add your hash browns and start frying. Don’t crowd your pan – fry in multiple batches if necessary. Adjust the heat as needed to maintain a nice steady sizzle. When the first side is a deep golden brown, flip your hash browns and cook the other side. When they are crisp on both sides and heated through, remove them to a cooling rack or some paper towels and sprinkle them gently with salt.
