Preparing your Yellowfin Tuna

Seared Tuna:

Heat pan
Take loin of tuna and season with your favorite spices (we like togarashi)
Place tablespoon high heat oil in pan
Place tuna in hot pan, rotate tuna every 20 seconds on all sides (reduce heat and extend time depending on desired doneness, 2min each side is well done)
Remove from pan and let cool
Slice thin, enjoy with favorite sauce (tare or ginger scallion)!

Confit Tuna:

Season tuna with sea salt
Place in small pot of olive oil (fully submerged)
Place on medium-low heat
Cook until tuna pulls apart with fork (about 20 minuytes)
Remove from oil and let drain
Enjoy warm or chilled with lemon juice, pickles and crunchy bread!
